Nick's Easy, Fluffy, Crispy Waffles
Flour - 1, 1/3 cups
Baking Powder - 4 teaspoons
Salt - 1/2 teaspoon
Sugar - 2 tablespoons
Cinnamon - 1 teaspoon
Eggs - 2, separated
Unsalted Butter - 1/2 cup (1 stick), melted
Whole Milk - 1, 3/4 cups
In a large bowl, mix together the dry ingredients (flour, baking powder, sugar, cinnamon, and salt).
Separate the eggs. Add the yolks to the dry mixture. Place the whites in a medium mixing bowl. Beat egg whites until stiff peaks form.
Add milk and melted butter to the flour/egg yolk mixture and mix until smooth.
Fold stiff egg whites gently into mixture with a spatula.
Ladle mixture into waffle iron (I like it as hot as possible so the outside is crispy but the inside fluffy). If your waffle iron tends to produce waffles that stick to the iron, grease it a bit with some coconut oil - it will add a lovely flavour and keep things from sticking.
Serve with berries, eggs, bacon, maple syrup, or my favourite Golden Syrup, or just eat them plain!
